Here’s what you need for 4 people:
- 2 cups water
- 1 cup heavy cream
- ¾ teaspoon salt
- ¾ cup quick cooking grits
- 1 ½ cups grated El Pastor Iberico Cheese
- salt and pepper to taste
- 1 pound peeled and deveined shrimp
- 2 Tablespoons olive oil
- 2 teaspoons Old Bay seasoning
- 2 green onions, sliced
Here’s how:
- Pre heat the oven to 400 degrees.
- Spray a sheet pan with cooking spray. Add the shrimp to the sheet pan and drizzle with the olive oil. Sprinkle the shrimp with the Old Bay seasoning and, using your hands, toss the shrimp to coat evenly with the oil and Old Bay seasoning.
- Add the water, cream and salt to a medium sized saucepan and heat over medium high heat until the mixture boils – about 3 minutes.
- Slowly stir in the grits. Cover the pan and reduce the heat to low. Cook, stirring occasionally for 5 to 6 minutes.
- While the grits are cooking, place the shrimp in the oven and cook for 3 – 6 minutes, stirring halfway until the shrimp are cooked through. Remove from oven.
- When the grits are cooked, stir in the grated El Pastor Iberico cheese. Taste and season with salt and pepper if desired.
- Divide the grits between 4 bowls and top with the shrimp. Sprinkle with green onions and serve.
