Here’s what you need for 4 people:
- 4 fresh apricots, halved and pitted
- 1 Tablespoon vegetable oil
- 1 package El Pastor Goat Cheese
- 2 Tablespoons honey
- 2 Tablespoons chopped pistachios
Here’s how:
- Pre heat a grill or grill pan to medium high. Make sure grates are clean!
- Brush each apricot half with vegetable oil.
- Place the apricots cut side down on the grill and grill for 3 – 5 minutes until apricots are softened.
- Remove apricots from the grill and place on a serving plate.
- Top each apricot with 1 tablespoon of crumbled El Pastor Goat Cheese.
- Drizzle with a little honey and sprinkle with chopped pistachios and serve.
